Ingredients
  • 500g Chicken Thigh
  • 1tbsp Dark Soy
  • 1 Onion
  • 5cloves garlic
  • 1thumb Ginger
  • 1 cinnamon stick
  • star anise
  • Cloves
  • 1/4cup Dark Soy
  • 2tbsp Light Soy
  • 1tbsp five-spice powder
  • 1/2tsp White Pepper
  • Salt
  • 1tbsp Sugar
  • 500ml Stock
Instructions
  1. Set instant pot to saute mode.
  2. Saute the onion, garlic, and ginger until fragrant.
  3. Add in the chicken and sear.
  4. Add the cloves, star anise, cinnamon stick, and 5 spice powder and cook for a bit.
  5. Add the dark soy sauce, light soy sauce, salt, sugar, and stock then set instant pot to pressure cook on high pressure for 9 minutes.
  6. Do a quick release and then remove the chicken from the pot, leaving the sauce.
  7. Add in corn starch slurry to thicken and put the trivet on your lotus buns.
  8. Set instant pot to steam mode for 2 minutes
  9. Do quick release. Remove buns and return the chicken to coat with sauce.
  10. Assemble the buns with lettuce, chicken, and parsley, and enjoy!
