Ingredients
Main Ingredient
  • 300g Rice
  • 150g Yamcut into cubes
  • 150g Pumpkincut into cubes
  • 30g Dried Prawnsfried
  • 15g Dried Cuttlefishfried
  • 15g Dried Mushroomssoaked and drained
  • 1/2tbsp garlicchopped
  • 1tbsp Shallotchopped
Seasoning
  • 1tsp Chicken powder
  • 1tbsp oyster sauce
  • 1tsp Sugar
  • 1tsp Pepper
  • 375ml Water
Instructions
  1. Wash then soak the rice for 20 mins. Drain then set aside.
  2. Slice the rehydrated mushrooms into cubes. Marinate with 1/2 tsp sugar and 1 tsp oyster sauce.
  3. Press Saute on the Instant Pot. Heat 2 tbsp of oil and saute the garlic and shallots until fragrant. Add in the marinated mushrooms and stir fry. Add in the yam, pumpkin, and rice. Fry and stir in the rest of the ingredients.
  4. Cover the Instant Pot with the lid. Select the Rice function.
  5. Naturally release pressure for at least 10 minutes. Serve and garnish with shallots crisps and diced spring onions.
