Ingredients
- Shitake Mushrooms
- 1 tbsp Vegetable Oil
- 1 tabespoon Sesame Oil
- 1 thumb Ginger minced
- 2 cloves garlic minced
- 1 kg chicken chopped
- 2 tbsp Dark Soy Sauce
- 1 tbsp Shaoxing cooking wine
- 1 tsp Sugar
- 1/2 tsp Salt
- 1 tsp Corn Starch
- 2 cups Stock

Instructions
- Set your instant pot to saute mode and saute the ginger and garlic until fragrant.
- Add in your chicken and sear.
- Add in the dark soy sauce, shaoxing cooking wine, sugar, salt, corn starch, and sesame oil, and cook for 1 minute.
- Add your stock and stir.
- For Pot-inPot: Place trivet on top of chicken and place pot of rice on top.
- Set your instant pot to pressure cook on high pressure for 9 minutes.
- Do a natural release of 10 minutes.
- Serve and enjoy!
