Claypot Chicken Rice with Bok Choy

Ingredients
  • 1cup Rice
  • 1 garlic
  • 1/2tsp grated Ginger
  • 1tsp oyster sauce
  • 1tsp Light Soy
  • 1tsp Dark Soy
  • 1cup Stock
  • 2 Shitake Mushrooms
  • 100g chicken
  • 1 Chinese sausage
  • 1tsp Sesame Oil
  • 1/4cup Carrots
  • Bok choy
Instructions
  1. Marinate your chicken and mushrooms with the garlic, ginger, oyster sauce, light and dark soy sauce, and sesame oil for at least 30 minutes.
  2. In a pot, layer all your ingredients excluding the bok choy starting with the rice, stock, and then the meat and carrots.
  3. Add 2 cups of water in the instant pot then put your trivet inside. Place your pot with rice on top of the trivet.
  4. Set instant pot to pressure cook on high pressure for 9 minutes.
  5. Do natural release for 5 mins.
  6. Open the lid and put another trivet on top of the rice and put the bok choy.
  7. Set the instant pot to steam for 2 mins.
  8. Do instant release.
  9. Transfer bok choy on top of rice and serve!
