Ingredients
Chicken Stock
  • 2cups Chicken Stock / Broth500 ml
  • 1cup Water250 ml
  • 1kg Chicken Thighs
  • 1kg Potatoescut halve
  • Fresh PrawnsFish Ball / Fish Cake, with tail & head
Laksa Broth
  • 1 1/2tbsp Oil
  • 1/2cup Laksa paste175g
  • 500ml coconut milk
Noodles and Toppings
  • 50g / 1.5oz Vermicelli Noodlesdried
  • 100g / 3.5oz Hokkien Noodlesoptional
  • 80g / 2.5oz Bean Sprouts
  • 80g / 2.5oz Tofu / Dou Bok puffscut in half
Garnishes
  • Fresh Coriander / Cilantro
  • Lime Wedges
  • Crispy Fried Shallotsoptional
  • Finely sliced Red Chillioptional
  • Lemon Grass
  • Green vegcurry leaf
Instructions
  1. Saute the laksa paste until fragrant.
  2. Layer up the chicken stock, laksa broth ingredients in the Instant Pot.
  3. Set pressure cook for for 5 minutes, wait for L0:10. Open lid, press saute, add in remaining ingredients and cook for 5 minutes.
  4. Assemble laksa and garnish.
