Ingredients
- 2 tbsp olive oil
- 1/2 medium White Onion peeled and chopped
- 1/2 medium Carrot diced
- 2 large Eggs lightly beaten
- 2 cups Cooked White Rice
- 1 cup Frozen Peas
- 2 tsp Soy Sauce

Instructions
- Press Sauté button on Instant Pot®. Add the oil and allow it to heat up.
- Add onion and carrot to Instant Pot®. Cook until vegetables are soft, 5 minutes. Stir occasionally.
- Move vegetables to side of pot and pour beaten eggs into empty spot in the Instant Pot®. Scramble eggs in the pot 3 minutes.
- Pour in rice and peas. Stir and then cook an additional 2 minutes.
- Mix in the soy sauce and turn Instant Pot® off.
- Serve immediately.
