Better than Takeout One Pot Rice
This savory One-Pot Rice featuring marinated chicken thighs and succulent shiitake mushrooms is so easy to cook in your Instant Pot and definitely better than takeout. Layered with the best seasonings, this flavorful meal makes for a perfectly umami dinner option to share with friends!
Ingredients
- 1/3 kg Chicken Thigh
- A few pieces of Shiitake Mushrooms dried
- 1 Chinese sausage
- A little Green Onion
- 1/2 Onion
- 2 Red Onions
- light soy sauce
- Dark Soy Sauce
- oyster sauce
- Pepper
- Sugar
- Corn Starch
- Sesame Oil
- Rice

Instructions
Remove bones of the chicken thigh, washed and sliced, put in a bowl, pour 1 spoon of light soy sauce, 1 spoon of dark soy sauce, 1 spoon of oyster sauce, 1 spoon of pepper, 1 spoon of sugar, 1 spoon of corn starch, 1 spoon of sesame oil; stir well and marinate for at least 30 minutes.
Slice the onion and red onion, soak a few shiitake mushrooms if you are using dried and then slice it, slice the sausage and set aside.
Set your Instant Pot to [SAUTE] function. Make sure that the timer is set to at least 20 minutes. Wait for it to say HOT.
Heat oil and put the onions and shallots in the Instant Pot, pour in the sausage and mushrooms and stir-fry them evenly. Add the marinated chicke and sear until surface is browned.
Wash the rice. Put the rice into the inner pot of the Instant Pot and cook for a bit then add water (the water should be the same as the usual cooking water, covering the mixture). [PRESSURE COOK] for 5 minutes. Natural Release for 10 minutes. Release the rest of the pressure by pressing the Quick Release Button.
Mix. After cooking, sprinkle some chopped green onion to start eating!
