Rice
  • 2 1/2 cups Jasmine Rice
  • 7 oz coconut milk 200 ml
  • 2 Pandan leaves tight knob
  • Salt to taste
Toppings
  • Sambal tumis paste
  • Fried Ikan Bilis dried anchovies
  • Sliced hard-boiled Eggs
  • Fried Peanuts
  • Sliced Cucumbers
  • Fresh or frozen Banana Leaf
  • Laska Chicken

  • Salt to taste

  • Sliced hard-boiled Eggs

Instructions
Hard-Boiled Eggs
  1. Add 1 cup of water into the Instant Pot
  2. Place in the removable steam rack that comes with the Instant Pot
  3. Add in 3-4 eggs.
  4. Pressure cook on high for 5 minutes.
  5. Let it naturally release for 5 minutes and add it in an ice bath.
Rice
  1. Cook and prepare the rice as usual but instead of cooking it in water, use the coconut milk, water; add in the pandan leaves and salt.
  2. Pressure cook on high for 5 minutes.
  3. Let it naturally release for 10 minutes.
  4. Let out the remaining pressure.
Plating
  1. Place a banana leaf on the plate.
  2. Add the rice in the center and place the toppings around the rice.
