Ingredients
- 1 whole chicken about 1.5kg
- 3 cups Water
- 1/2 cup Dark Soy Sauce
- 1/4 cup light soy sauce
- 1/4 cup oyster sauce
- 2 tbsp Sugar
- 3 slices Ginger
- 3 cloves garlic smashed
- 2 star anise
- 1 cinnamon stick
- 2 Spring Onions tied in a knot
- 1 tbsp Sesame Oil for brushing
- cooked rice for serving

Instructions
- Clean and pat dry the whole chicken.
- In the Instant Pot, add water, dark soy sauce, light soy sauce, oyster sauce, sugar, ginger, garlic, star anise, and cinnamon stick. Stir well.
- Place the chicken in the Instant Pot, breast side up. Add the knotted spring onions on top. Close the lid, set to "Pressure Cook" on high for 25 minutes.
- Once done, let the pressure release naturally for 10-15 minutes, then quick-release any remaining pressure.
- Remove the chicken, brush with sesame oil, and slice. Serve with rice and drizzle some sauce over the chicken.
